Stewed Minced Meat Taco’s with Seasoned Oven Baked Potatoes and Fresh Salad!

Hahaha! I think that’s one of the longest titles I’ve ever had for a blog post! Ha! πŸ˜€ I mean come on it’s food we’re talking about here right? πŸ˜‰ Any who’s…. Goodnight and welcome back to….

*Brina my niece wasn’t featured in this production with me* πŸ™‚

I recalled the first time when my niece Kabrina *Brina, Breens, etc for short* made Taco’s for the first time home with no assistance from any adult within the household and I tell you my friends it was SO good! I was blown away and she inspired me to create them myself!!! πŸ˜€

This recipe is quite simple! I used a lot of our local seasonings that are brewed on de islands that flavours our delicacies well and will leave you wanting for more and even of considering to reside in the isles!!! πŸ˜€

Here’s what to brew:~ Para Taco’s

β€’ 1-2 two packs of unseasoned minced meat. *I used 1 pc*

β€’ 1-2 packs of Ummmm…little things shaped like pockets that’s made out of flour I bought in the grocery near our vicinity that I forgot the name for! :/ *shame*

Seasonings ~ Jamaica thyme, Big leaf thyme and well I don’t know the right name for the other kind of seasoning but we call it here on the islands seasoning bush lol πŸ˜€ ! but we know the difference from each seasoning due to the shape of the leaves.

Soya Bean Oil by Lotus *prior cooking of mince meat* another local item from de isles! πŸ˜€

Para Oven Baked Potatoes~

10 English potatoes *or more if you wish*

Cheese (New Zealand)

Seasonings~ Lime Pepper & Five Spice Powder. *seen below in the image* πŸ™‚

Butter *this is used to rub on the inside of the baking pan, tray, etc so that the potatoes won’t stick to the surface and prior prevention from burning. I used Blue Band Butter. It’s one of our local items here πŸ™‚ !

Para Fresh Salad~

1 Purple Cabbage *I used half*

1 Green Cabbage *I used half in this one too*

Lettuce *I didn’t used the entire thing*

2 carrots

1 tin of corn by Matouks

1 bottle of Mayonnaise by Swiss

*Sweet Tip~ Add sugar *brown* to salad for sweet taste! We love adding it to our salads & cold slaws* ❀

LET’S GET COOKING!!!

Season minced meat from two days before brew date! By this all the different flavors from each seasoning will marinate and kill the fresh scent from the meat. In metallic pot of your choice or frying pan is recommended as well place 1-2 table spoon of Soya Bean Oil and wait until it gets hot. Through in veggies or pack seasoning of your preferred choice *like I do* for extra flavor into pot and stir gently for a few minutes. Add the minced meat while mixing in the veggies or seasoning that was added before. Leave to cook properly for 5-10 minutes, before adding ketchup, bar-be-que sauce and at least 1/2 cup of water. Allow the sauce to thicken and then turn off. Leave meat in the pot until it’s time to place in the taco.

In a foil based baking tray or pan paste a small piece of butter back and forth and around the inward sides of tray/pan until fully greased. Place pockets facing down. Pop them into the oven at between 250-300Β° to warm up for 5-10 minutes on each side. They are basically already cooked when bought so just a quick warm up does them fine! After heating up, remove from out of oven and place on table or cool area in the kitchen for cooling purposes. πŸ™‚

Wash potatoes thoroughly with firm side on the wash sponge which removes the dirt from off the skin. Place in water in pot on stove to boil for 15-30 minutes. Test with the sharp tip of a knife midway of potatoes to see if it’s soft. By doing this it shows whether it is cooked properly or not.

Before placing them on the baking tray, paste butter back and forth and to the sides of tray to prevent sticking/burning. Sprinkle Lemon Pepper and Five Spice Powder unto greased tray. Add sliced potatoes unto the tray and then sprinkle more of the selected seasonings. Lastly grate 1/3 of New Zealand cheese in a bowl or over potatoes before popping them into the oven at 350Β°.

Before these babies were placed in oven! I started eating them before they were baked lolol! It was too good to be true! Or was it? πŸ˜‰ lol πŸ˜›

Leave for 10-15 minutes before checking potatoes. They must turn golden brown before you flip them over on the other side to bake. After other side is cooked, remove from out of oven and place on table, cooling rack etc for that purpose.

Last but not least the Salad! Grate both purple and green cabbage alongside with the carrots in large plastic bowl along with stripped Lettuce slices.*you can transfer to glass bowl or dish if you like after grating process* Open the tins of corn and add immediately into grated cabbage/carrot. Add mayonnaise and 1 tablespoon of brown sugar. Mixed it up all together and then place in refrigerator.

AND WE’RE DONE!!! Phew!

I always see my bestie away from seeing my bestie in reality. Be it in an art piece, book, paper towel, nature, food you name it! I tell her that we can never get away from each other. Haha! Hence the reason why here we are featured again this time in food asΒ  dessert in glass jars! Heh! Well Dee, who would have thought we would have made it this far together gurl? πŸ˜› lolol! ❀

Dinner Date for ahhhh….me?

I like treating myself and when I do, I love doing it pretty well πŸ˜‰ This date was lovely! I really enjoyed it! I added chocolate wafers by Bridge with a toffee by Diana *not by my bestie Diana from La Petite Muse okay! Haha! πŸ˜› * it’s a local candy company here on de islands Hahaha!!! Oh my that was funny! πŸ˜€ This flavour wasn’t the one I wanted but I accepted it with a yes just for HaΓ€gen-Dazs sake!Β 

 

TamBrina’s Homemade Pizza!

Finally! Lol! I don’t have to give credits to IG for this one lol cause it came straight from our home to the internet lol! *I hope that made sense* πŸ˜€ Sometime around mid last year or earlier in the year of 2019 my niece and I planned to make a veggie pizza together. So it came to pass as God blessed us with the various ingredients we needed. Thank you Lord! ❀ 

Wanna try it? Yes! What you need:-Β 

Baking Flour (white) we used Ibis *it’s a local brand* de best from de islands after Hibiscus.

Tomato Ketchup *we used Swiss*

Chief Baking Powder

Metallic Baking Tray

Toppings:- Green sweet peppers, basil seasoning, tomatoesΒ  and New Zealand cheese.

Instructions:- Pour flour into a bowl. Add baking powder to it (not the entire pack just 1/3 of it.Β  Heat water on stove/in microwave for at least 2-5 mins. Pour water into the bowl a little bit at a time; as you add stop and press down the forming batter firmly with hands in a folding inward direction over and over until soft, moist and firm.

Grate cheese *we used half of the block* chop all veggies and place together in a separate bowl.

Spread crust like a sheet unto the tray. Make sure the entire bottom surface of the tray is covered with the crust. Press down neatly at the four corners of the tray to get square/ rectangular shape. Roll extra ends of the crust to the top surface of the tray.

Add ketchup smoothly pasting it on with a spoon. Add grated cheese & chopped veggies. Sprinkle remaining cheese on crust ends that is spread on the top surface of the baking tray. Neatly fold in each end and press down with a fork to prevent the ends from opening.

Sprinkle basil seasoning and put into the oven. Bake for no more than 30-45mins (350 Β°). When golden brown/fully cooked remove from stove. Place on a cooling rack or like we did on our table on top of a cloth to cool 2-5 mins.

Pray to the Provider and using a pizza cutter, cut carefully from the bottom up horizontally. Then down vertically.

In total we got 12 square slices of pizza, that were more than enough to share with the entire family πŸ™‚
